Mache, Mango and Avocado Salad

A simple, fresh and fruity salad never goes astray at a warm summer luncheon or dinner. 

We like to use this salad as a side to our Tilapia en Papillote, but it works just as well as a lunch meal on its own, especially when grilled shrimp is added - yum!

Mache, Avocado, Mango Salad Passion Fruit Vinaigrette

  • 4-8 Ounces Mache
  • 1 firm, ripe avocado
  • 1 firm mango
  • ½ tablespoon finely minced shallot
  • ½ teaspoon Dijon mustard
  • ½ teaspoon honey
  • ½ cup passion fruit juice reduced to 2 tablespoons
    (or passion fruit puree)
  • 1 tablespoon Champagne Vinegar
  • 3 tablespoons grape seed oil
  • Salt & pepper to taste

LIGHTLY PAN FRY pine nuts. They cook quickly so keep watching to make sure they don't burn.
GATHER sliced mango, avocado and spring onion.
PLATE Mache, removing the bitter stems.
PIT an avocado and slice into wedges.
ADD avocado and mango wedges to plate of Mache.
MIX together all ingredients necessary for dressing.
DRIZZLE dressing ontop of salad and SERVE.
