Gluten Free Pumpkin Pie

The traditional symbol for the Harvest season, Aida's Gluten Free Pumpkin Pie hits all the right notes. After a few holiday dinners deprived of our favorite pies due to their gluten-filled crusts, this recipe will definitely be displayed proudly on our table this upcoming season and is sure to be devoured by both celiacs and gluten lovers alike. 

GLUTEN FREE PUMPKIN PIE CRUST 

INGREDIENTS

 

  • 1cup brown rice flour
  • ¾ cup potato starch
  • ¼ cup tapioca flour
  • 1 ¾ stick butter, chilled and cut into ¼ inch cubes
  • 2 eggs
  • 2 tspn sugar
  • 1 tspn Xantham Gum
  • 4 tspn apple cider vinegar
  • ¼ tspn salt
  • 5-6 tbs of ice water or as needed
method

 

MIX all dry ingredients in a bowl.

ADD chilled butter to dry ingredients.

MIX together until it is a crumbly consistency.

WHISK eggs and vinegar in a separate bowl until foamy.

ADD wet ingredients to dry ingredients and MIX gently until incorporated. 

ADD chilled water as needed. 

ROLL the mix into two separate balls.

CHILL in the refrigerator for at least one hour.

ROLL the two balls out into two 9 inch circles.

PLACE one dough circle into a pie dish.

FREEZE the other ball for future use.

PRICK the bottom of the crust using a fork.

CHILL the crust for 30 minutes.

FILL with pumpkin pie filling.

  

PUMPKIN PIE FILLING 

INGREDIENTS

 

  • 1 can or 16 oz. pureed pumpkin
  • 1 can or 14 oz. organic sweetened condensed milk
  • 2 large eggs
  • 1 tspn ground cinnamon
  • ½ tspn ground cardamom
  • ½ tspn ground nutmeg
  • ½ tspn ground ginger
  • ½ tspn salt
  • One 9 inch pie crust, unbaked
METHOD

WHISK pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth.

POUR into crust. 

BAKE for 15 minutes at 375 degrees.

REDUCE the oven temperature to 350 degrees and BAKE up to 35 minutes or until knife inserted comes out clean.

LET COOL, refrigerate and serve with vanilla whipped cream.
