Aida The Skinny Chef’s Gluten-Free Curry Meatballs

Living in New York City, learning how to drive and how to cook becomes unnecessary. Taxis and transit systems take you anywhere you want to go and neighborhoods are bursting with every imaginable cuisine.

My desire to see grass and the ocean motivated me to acquire a drivers license years ago, but I had managed to get to the age of 45 without knowing how to properly cook just about anything.

A diagnosis of Celiac disease for my son and I meant the jig was up. I was going to have to learn how to cook and it wouldn’t hurt for my son to start learning as well. I asked my good friend Aida Koski if she could teach us how to add flavor, variety and balance to a gluten-free diet.  Here’s a wonderful recipe she taught us for gluten-free meatballs.

  

 

Curried Chicken Meatballs

INGREDIENTS: MEATBALLS

• 15 oz. ground chicken
• 1 egg
• ½ oz. tamarind pulp
• ¾ oz. grated Parmesan cheese
• 1 tbsp coriander seeds, crushed
• 1 tsp oregano
• Pinch of salt and pepper
• 1 tsp fennel seeds
• 1.5 oz. gluten-free breadcrumbs (we like Gillian's >>)
• 2 tbsp grapeseed oil

 
INGREDIENTS: CURRY SAUCE

• 2 tbsp grapeseed oil
• ½ oz chopped garlic
• 1 green chilli, minced
• 2 bay leaves
• 1 tsp dried oregano
• 1 tsp turmeric
• 1 tbsp garam masala
• Pinch of salt and freshly ground pepper
• 1 oz. tomato puree
• 4 tomatoes, chopped
• 8 oz.  red wine

 

 

Method

MEATBALLS

• COMBINE all ingredients (except for the oil) in a large bowl.
• MIX well with your hands to combine.
• FORM MIXTURE into 5cm meatballs and set aside.
• HEAT a large non-stick skillet over medium-high heat. 
• ADD the oil.
• FRY meatballs on all sides until browned.
• REDUCE heat to low.
• CONTINUE to cook until meat is cooked through (8 to 10 minutes).
KEEP WARM

CURRY SAUCE

• PLACE SKILLET over a medium-high heat.
• ADD oil, then garlic and chilli.
• SAUTE for 1 minute.
• ADD spices and toast for 10 seconds.
• STIR in the tomato puree.
• ADD tomatoes and red wine.
• SIMMER for about 5 to 10 minutes.
• PUT the warm meatballs into the sauce.
• STIR gently to coat well with the sauce.
• SERVE with rice.

We served ours with Cardamon Rice and Turmeric Potatoes

I wonder if little girls even realize, before being taught, that Barbie’s looks are considered in some way ideal.  When our daughters look around them they see women of all shapes, colors, and sizes.
